Direct pressing of both varieties separately, and then co-fermentation of the musts at 13°C, 50% in stainless steel and 50% in concrete eggs. Aging in stainless steel and concrete with a constant suspension of the fine lees for 4 months.
The Sangiovese comes from La Arboleda and the Syrah from La Consulta, both within Uco Valley.
